Elizabeth "Betty" Shannon Parker

Elizabeth Shannon Parker, (Elizabeth May Shannon), and affectionately known as Betty or "Lillibet", passed away at her home on November 9, 2024, in Beaufort, North Carolina. Elizabeth was born on February 26, 1935, in Washington DC. She moved from her early life surroundings in Greenville, SC to Greensboro, NC . 

Elizabeth (Betty) graduated Curry High School in Greensboro and went on to attend St. Mary's College in Raleigh, NC. She later returned to Greensboro where she started her family. In 1973 they relocated to Beaufort where she became a cherished member of the community.

Elizabeth was proud to have worked as a dental hygienist in her 20s before dedicating herself to her family as a homemaker. Her professional journey in Beaufort began as she followed her passion as an antique dealer. Later, she significantly contributed to the local heritage as the manager of the Beaufort Historical Association. Her career further diversified when she helped open and manage the Inlet Inn, serving there until 1990. Elizabeth met and married the love of her life, Talbot "Tod" Fort Parker, Jr. in 1990 relocating her to Goldsboro, NC. 

Fulfilling a lifelong dream of Elizabeth's to live in the mountains, she purchased a small bootlegger's cabin in Waynesville, NC which she lovingly restored. She and Tod called it their "Sugar Shack". They retired to their special little haven there until 2022 when Elizabeth returned to her home in Beaufort. 

Elizabeth was an active member of Waynesville Presbyterian Church in Waynesville, NC and had previously been involved with the Goldsboro Presbyterian Church in Goldsboro, NC. Her faith was an integral part of her life, reflecting her commitment to her community and her personal beliefs.

Elizabeth's passions included writing poetry, painting, restoring antiques, and gardening. She cherished her time spent with her grandchildren, working in her flower beds and traveling with her beloved "Tod". Her creative and nurturing spirit was evident in every aspect of her life, from her professional endeavors to her hobbies. Elizabeth was know by all for her southern charm, her warm demeanor and humble sophistication.

She is survived by her son, Richard Sterling Ingram, Jr. and his wife, Susan; daughter, Sunny Shannon Ingram; stepdaughter, Constance Lenore Cooper; stepson, Robert "Bobby" Parker and his wife Donna; stepson, Richard Parker and his wife Felisa; stepson, Charles Parker; stepdaughter, Nancy P. Parsons and her husband George; grandchildren, Lindsay Ingram Judy, Richard Tyler Ingram, Morgan Ashley Ingram, Timothy Gray Ingram, Molly Parker, Amy Parker, Harrison Parker, Jordan Parker, Virginia Parsons, Wesley Parsons and great-grandchild, Jaden Judy; and her chosen child, her cat, "Dolly" who was by her side when she passed.

 Elizabeth was preceded in death by her husband, Talbot Fort Parker, Jr.; son, Timothy Edward Ingram; mother, Louise Dillard Webb; father, Edward Earle Shannon; and sister, Marilyn Shannon Merritt.

A special thank you to her loving caregivers who provided "Lillibet" with the utmost comfort, care and friendship during her final years.

As per her wishes, no services will be held. Contributions in memory of Elizabeth can be made to the Beaufort Historical Association at 130 Turner St, Beaufort, NC 28516, or to Pruitt Health-Hospice, which cared for her in her final days. 

The family has entrusted Noe Funeral Service with the arrangements. Elizabeth's life was marked by her love for her family, her dedication to her community, and her enduring faith. She leaves behind a legacy of warmth, creativity, and devotion that will be remembered by all who knew her.
